light rainTaverns, Kapama and the true taste of the region — a complete guide on how to eat like a local and what are the must-try dishes.
If you see these three dishes on the menu, you've come to the right place. Here's what they are exactly and how to order them correctly.
This is not just "meat and cabbage". Real kapama is cooked in a clay pot (pot) for at least 5–6 hours on low heat. Sauerkraut, rice and at least 3 types of meat — pork, beef, chicken — along with sausage and black pudding. The secret spices are garlic pepper, bay leaf and a glass of red wine.
Order ONE kapama for two or three people. The portions are huge. If you order it for yourself, you will eat until the next morning.
A bone-in veal shank braised with whole onions, potatoes, carrots, and red wine. Cooked overnight in the oven. The meat should just fall off the bone—if it doesn't, it's not done.
A raw-dried pork delicacy stuffed into a pork stomach. The typical spices are cumin and black pepper. A perfect appetizer for red wine in front of the fireplace on a winter evening.
Thick bean soup with old dried beans (kostereta). Seasoned with savory and onion. Warms like nothing else after a day of skiing.
The meat is grilled over charcoal. Look for this phrase on the menu — it guarantees an authentic, smoky flavor. The Borina sausage is especially recommended.
A combination platter with local meats — sujuk, kebab, sausage and grilled yellow cheese. Ideal for sharing with company.
Прясно изпечена баница с топъл мед и едро нарязани орехи. Горещата баница с планинско мляко е класическа банска закуска.
There are two types of establishments in Bansko — tourist traps and genuine family taverns. Here's how to recognize them and which ones to choose.
They are mostly located on Pirin Street, the main tourist street. They have greeters out front, loud music, and menus with pictures of each dish.
Hidden in the labyrinth of the old quarter and the alleys around the Holy Trinity Church. No greeters, no pictures on the menu. The owner or family serves. It smells of wood and cooking.
Walk around the Holy Trinity Church and the square, but enter the intersections - Otets Paisii Street or around Vazrazhdane Square. If the restaurant smells of wood and cooking right from the entrance - enter without hesitation.
Легендарно място, където традицията оживява. Ако търсите перфектния баланс между домашен уют, автентичен бански дух и гозби, приготвени по забравени местни рецепти, това е механата, която не бива да пропускате.

Every morning, local producers bring in fresh produce—mountain cheese, yellow cheese, homemade yogurt, fresh eggs, beekeeper honey, and homemade brandies. Shop here for a picnic in the mountains or as provisions for your accommodation.
Razlog has its own tradition of dried meats - Razlog sausage is lighter and more aromatic than Bansko. Buy it at the market and take it home.
Razlog has a great tradition of afternoon coffee in the square. Sit with the locals, chat - here you will understand the true character of the region.
Arrive in Banya around noon → eat at a local tavern → go to the SPA (not the other way around — on a full stomach in hot water is a bad idea!) → after 2 hours at the springs → dinner in Dobrinishte.
A full stomach in 42°C water is a recipe for indigestion. Wait at least 1.5–2 hours after eating before entering the mineral pool.
Автентичният вкус на Македония в сърцето на Добринище! След релаксиращ ден в минералните басейни, тук ви очакват богато тавче гравче, традиционна скара, урнебес салата и живи китари, които създават незабравима празнична атмосфера.

The only grape variety indigenous to Bulgaria. Light, beer-like, with a fruity aroma. Goes perfectly with the heavy Bansko cuisine.
A hybrid variety with a richer body. More tannic than the Wide Mill. An excellent choice for a winter evening with a cup of coffee.
If you are offered "homemade brandy", ask if it is grape or fruit. In the mountains, the alcohol sets in faster - be careful with the degrees!
Mint, lemon balm and oregano from Pirin. Drink after your spa treatments — it hydrates and soothes. Ask for "mountain tea" — they'll bring you a teapot.
Instead of looking at the wine list, ask the waiter: "What local wine do you recommend with the kapama?" In good taverns, they will pour you something that is not on the menu - homemade from a local producer.
Use these words and the waiter will immediately know that you are not an ordinary tourist. Better service guaranteed.
Enter the tavern, sit down, and say, "Bring us whatever you recommend today — in a pot, on a spit, with house wine." If the establishment is genuine, you will receive an unforgettable dinner. If they ask you "what exactly" — get up and leave.
